Good food and feeding friends are really one thing to me. Sometimes I stand in a store, looking at food, and say to myself, “I know who would like this.” I cook. I feed friends.
Above are the ingredients for an open-faced shrimp sandwich that you can get in any deli or coffee shop in Scandinavia. This is the nine minutes miniature version.
With the nine minutes, this requires some shrimp, dill, mayo, lemon wedges, a sliced tomato, and slices of baguette. Looking at the picture below, just assemble. When you are ready to eat, squeeze some lemon juice on top of the shrimp and “dig” in.
Take a slice. Close your eyes and see yourself at the edge of a fjord – with gentle summer breezes washing over you. In other words, “A good life.”
